FROSTED GINGERBREAD LOAF

 

GLUTEN FREE

DAIRY FREE


 


•Preheat over to 350
•In one large mixing bowl add:
1/4 Cup vegan butter melted & cooled
1/4 Cup pure maple syrup
1/4 Cup blackstrap molasses (if you don’t have this on hand i’m sure it’s just as good without)
1 egg
1 tsp vanilla extract
1/2 Cup dairy free milk, I used almond
*Combine wet ingredients then add dry ingredients:
1 Cup gluten free all purpose flour
1 Cup almond flour
1 tsp baking powder
1.5 tsp fresh ground ginger
1 tsp cinnamon
1/2 tsp allspice
1/4 tsp salt
*Combine all ingredients and pour into a lined loaf pan

Bake at 350 for 15 minutes

Glaze:
2 tbsp melted vegan butter
1/4 Cup powdered sugar
1 tsp vanilla extract
dash of cinnamon
*stir until smooth frosting like consistency, add a dash of df milk if it’s too thick

Pour glaze over cake after it cools a little and sprinkle more cinnamon if desired!
