CINNAMON ROLL COOKIES

 

GLUTEN FREE

DAIRY FREE

REFINED SUGAR FREE

 

COOKIES

  • 1 cup vegan butter (softened)

  • 2/3 cup coconut sugar

  • 1 egg yolk or flax egg if vegan

  • 1 tsp vanilla extract

  • 2 1/4 cup gluten free all purpose flour (I use Bob’s Redmill)

  • 2 tsp cornctarch

  • pinch of sea salt

FILLING

  • 1/3 cup coconut sugar

  • 3 tsp cinnamon

  • pinch of sea salt

  • 2 tbsp melted vegan butter or coconut oil

GLAZE

  • 1 cup powdered sugar (confectioners sugar) - this is the only refined sugar in the recipe, feel free to substitute with a sugar free alternative

  • 4-5 tsp dairy free milk

  • 1/4 tsp vanilla extract

  • 1/2 tsp cinnamon

 
 

METHOD:

  1. Get out 2 separate mixing bowls. In the first bowl combine all wet ingredients. In the second bowl combine all dry ingredients. Slowly add dry ingredients into wet ingredients and mix thoroughly.

  2. Wrap dough in plastic wrap and let it chill in the fridge while we make the filling!

  3. Get out another small bowl and combine coconut sugar, cinnamon, and salt.

  4. Grab dough out of the fridge and roll it into a long rectangular shape. Brush melted vegan butter on the the dough.

  5. Distribute filling mixture onto the dough on top of the melted butter.

  6. Start at the long edge and roll dough into a log. Wrap the dough log in plastic wrap and store in freezer for 15 minutes.

  7. While dough is chilling, pre-heat the oven to 375 F

  8. Remove dough from freezer and cut log into 1/4 inch pieces and place on cookie sheet

  9. Bake cookies for 10-15 minutes

  10. While cookies are baking, make the glaze - combine powdered sugar, dairy free milk, vanilla and cinnamon.

  11. Let cookies cool for 10 minutes then add the glaze and enjoy!!
